Ingredients

  Filling
• 1 rotisserie chicken
• 4 onions
• 30 g of butter
• 10 sun-dried tomatoes
• 
  Rice
• 500 g of basmati rice
• 20 ml of hot water
• 5 g of saffron
• 4 egg yolks
• 1 tablespoon of rice flour

Preparation

• Filling

• Get 1 rotisserie chicken
• Remove all the bones and shred the meat a bit; keep the skin
• Get 4 onions, and slice them not too fine (I used a mix of white and red onions)
• Add 30 g of butter in a pan and melt it
• Add the onions on high heat; let them release the moisture
• Prepare a cartouche: fold a piece of parchment paper always on the same vertex, to have a triangle, then cut the outside to have it as a circle that can cover your pan
• Once the liquid is removed, reduce heat to a minimum and cover them with a cartouche
• Caramelize them slowly, stirring from time to time
• Once done, add salt and deglaze with vinegar
• Chop 10 sun-dried tomatoes
• Mix together onions, tomatoes, and chicken

• Rice

• Wash one time 500 g of basmati rice
• Cover with water, bring to a boil, then cook it covered very gently for the expected time
• Remove from heat and keep it covered for 10 minutes before removing the lid, then mix it and let it cool down
• Get 20 ml of hot water and dissolve inside Saffron (5 g of saffron in packets), add 4 egg yolks, and mix well
• Add the saffron and yolks mix to the cold rice and mix well. If it is too fluid, add 1 tablespoon of rice flour

• Composing

• Get a medium pot that can go in the oven, like a Dutch oven, 1.5 liters capacity should be perfect
• Grease with butter or lard
• Put 1/3 of the rice on the bottom and 1/3 on the border, and press it well
• Fill the center with the mixture of chicken, onions, and dry tomatoes
• Cover with the remaining rice
• Place in the oven for 20 minutes at 180 °C
• Let it cool down 15 minutes, then turn it, slice, and serve
• The decoration topping was chopped parsley mixed with chopped sun-dried tomatoes and chopped cured green peppers
